Trail Mix Cookies
Ingredients:
- ½ cup applesauce
- ½ cup white sugar
- ½ cup brown sugar
- 1 ½ teaspoons vanilla extract
- 2 egg whites
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ teaspoon ground cinnamon
- 1 ¼ cups quick cooking oats
- ½ cup white chocolate chips
- ½ cup chopped pecans
- ⅓ cup dried cranberries
Directions:
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper – it prevents sticking and the bottoms of your cookies getting too dark.
- Beat together applesauce, both sugars, and vanilla, and set aside.
- Beat the egg whites in a small bowl until frothy (I use a hand mixer running on high speed for this). Add the egg white froth to the applesauce mixture, stirring gently to combine.
- Next, whisk together the flour, baking soda, salt, and cinnamon. Add this to the wet ingredients mixture, stirring until just combined – don’t overmix.
- Add the oats, white chocolate chips, dried cranberries, and pecans, mixing until well incorporated.
- Drop by large tablespoons onto cookie sheets.
- Bake until golden brown, about 9-10 minutes. Cool on wire racks.
Want to mix it up a little? You can easily substitute different nuts, chocolate chips, and dried fruit according to your tastes. My kids love a version of this where the white chocolate chips and cranberries are swapped for dark chocolate chips and chopped dried apricots. A good rule of thumb is, if it belongs in trail mix, it’ll probably taste great in this cookie!
