Taco Tot Casserole
Ingredients:
- 2 lbs ground beef
- 2 packets taco seasoning
- 16 oz frozen tater tots
- Seasoning salt, to taste
- 16 oz shredded cheddar cheese
- Additional toppings: shredded lettuce, sour cream, diced tomatoes, green onions, salsa (all optional)
You’ll also need:
- Large skillet
- Spatula
- 9×13 baking dish
- Cooking spray
Directions:
- Pre-heat oven to 400 degrees.
- In a skillet, brown the ground beef over medium heat, crumbling as you go. Drain and discard grease when the beef is thoroughly browned. Add taco seasoning and prepare according to package directions.
- Lightly coat the bottom and sides of a baking dish with cooking spray. Spread meat mixture in the bottom of the dish.
- Top evenly with tater tots and sprinkle lightly with seasoning salt. Bake for 20 minutes or until the tater tots are golden brown and crisp.
- Turn off heat, and top the tots with the shredded cheddar cheese. Return to oven for 5 minutes to let the remaining heat melt the cheese.
- Remove from the oven and top with sour cream, lettuce, tomatoes, or any other toppings. Enjoy!
